Pickled Vegetable Sunomono

SUNOMONO JUST MEANS "VINEGARED THING" Make a brine of salt water, lemon rind and a few chilli flakes. Add in chopped celery, radish, purple onion. Let sit for a day, or least a half day before serving. Can use cucumbers. Seaweed.  Cook a packet (400g or so) thin rice vermicelli noodles, drain.  These are sometimes called cellophane noodles. Soak in mixture of approx 1 cup rice wine vinegar, 2 - 4 tbsp sugar, 1 tbsp soy sauce. Let cool in fridge. You may need to add more vinegar mix at end if noodles have soaked it all up.  Arrange prettily with a lemon slice. Some times people top with sesame seeds too.

Longevity Kale Chips

I am in love with these. Once caution: Very easy to over salt these - don't go over 1/3 tsp. Head of kale Olive oil, 2 tbsp Salt, 1/3 tsp Nutritional yeast 2 Heaping Tbsp Apple Cider Vinegar 2 Tbsp Optional: Could add other stuff like mixture of:  golden flax seeds, sunflower seeds, cashews, sesame seeds, nutritional yeast, apple cider vinegar, hemp seeds, pumpkin seeds, sea salt, onion powder, dill weed, black pepper Tear kale into chunks off the stalks and wash. Toss in olive oil, salt, nutritional yeast. Bake in over at 250F for 45 min. Check at 30 min and turn. Done when there's an audible crunch. If you end up over salting, use as croutons.

Valter Longo Pasta

This is a very healthy new way to eat pasta and a hearty vegetable soup at the same time. Inspired by my intellectual crush on Valter Longo from The Longevity Diet. I'm going to do approximate proportions and obviously you can add and subtract vegetables based on what's on hand. I'll star the key ones to use though. Carrots (two) Celery (two) Green Beans (handful) *Kidney Beans (tin) Corn (tin) Peas (half cup) *Onion (whole) *Garlic (4-6 cloves) Tomatoes (Fresh or tinned) Half packet of pasta Salt 1-2 tsp depending on how much you're cooking - start with one then adjust. Veg stock 1-2 tsp depending on how much you're cooking - start with one then adjust Basil (dried or fresh) Olive oil Top with: Goat Cheese Scallions Saute the onions and garlic in a generous amount of olive oil and then add the rest of the vegetables and the stock. Foccacia

(Dough made in bread maker) 1 cup lukewarm water 2 tablespoons olive oil 1/2 teaspoon salt 2 teaspoons chopped garlic (Or sub garlic powder or garlic salt. Can also omit.) 1 tablespoon chopped fresh rosemary 3 cups bread flour (I used half organic all purpose and half our milled local grain) 1 1/2 teaspoons active dry yeast ---- For the top: 2 tablespoons olive oil 1 1/2 teaspoons chopped fresh rosemary --- DIRECTIONS Place water, 2 tablespoons olive oil, salt, garlic, 1 tablespoon rosemary, bread flour and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select Dough cycle; press Start. Remove dough from bread machine when cycle is complete. Pat dough into either a 9x13 inch baking pan or 12 inch pizza pan. Use your fingers to dimple the dough every inch or so. Brush with remaining olive oil and sprinkle with remaining rosemary. Preheat oven to 400 degrees F (200 degrees C).
