Pickled Vegetable Sunomono




SUNOMONO JUST MEANS "VINEGARED THING"

Make a brine of salt water, lemon rind and a few chilli flakes. Add in chopped celery, radish, purple onion. Let sit for a day, or least a half day before serving. Can use cucumbers. Seaweed. 

Cook a packet (400g or so) thin rice vermicelli noodles, drain.  These are sometimes called cellophane noodles. Soak in mixture of approx 1 cup rice wine vinegar, 2 - 4 tbsp sugar, 1 tbsp soy sauce. Let cool in fridge. You may need to add more vinegar mix at end if noodles have soaked it all up. 

Arrange prettily with a lemon slice. Some times people top with sesame seeds too.
